33 cl bottle, vintage 2019.
It is the version of their Farmhouse spontaneously fermented with local acacia and elderflower flowers.
On the nose funky notes of hay, straw, light earthy.
Straw color, veiled (but not entirely).
Evanescent foam with poor consistency, dissolves immediately.
In the mouth great gustatory complexity, despite a very smooth body and characterized by a lively carbonation.
From the point of view of taste, I recognize floral notes that give a small sweet contribution at the beginning of the drink, but very often an astringent sour note, typically wild, intervenes.
This acid note really takes the stage, but even after this the beer develops and re-proposes fruity and "farm" notes (straw, wet wood).
As the temperature of the beer dissolves in the Teku glass, in closing, after the clear acidity (of fruit or, in this case, wildly fermented flowers), I recognize the elderberry a little more clearly and a slight hint of cereal also emerges.
