The Unyielding. At 17.1% ABV, this ale is a force. We used rice, not syrup, to achieve a bone-dry finish. This austerity lets the complex, spicy, and pear-like yeast character—reminiscent of the great Belgian Trappist ales—shine through.

Amber body with a coarse white head that disappears before the pour is finished. Lots of bubble action. Very pretty aroma: honey, apple, banana & a hint of yeast. Mildly sweet. Flavors: apple, pear, banana, pepper, spice, a little honey & rice. Feel: first sip felt flat but after that it feels like there is adequate carbonation & with 17.1 ABV despite not feeling that high there’s plenty of alcohol to entertain the tongue. Slight stomach heating. Overall: I love Belgiums & strong ales and this one is excellent.

Poured at fridge temp. Pours a slightly opaque yellow/orange with a small amount of white head. The nose is very fruity. Fresh apricots, peaches, plums, mango, clove, vanilla, apple, slight yeast note, and a nice layer of caramel.
The taste is a bit harsh on the first sip. Bitter and alcohol heavy. Not a nice boozy - a sharp fusel alcohol taste. This kind of wipes out all of those nice notes on the aroma. Some fruit is there, along with leather, hops, grass, and maybe a hint of honey. My main descriptor of this is harsh.
Mouthfeel is light with a bitter alcohol aftertaste.

Clear, dark gold body; dense carbonation but virtually no head - just a coarse, thin ring inside the glass. Faint nose; spicy; peppermint and candi sugar sweetness. Peppermint and booze flavor; little malt character; some pear-like esters. Heavy body; thick and flat; sharp alcohol bite; overall dry despite a thin layer of sweetness.
This is a beer I'll have to let age (I have one more bottle), probably try and save it for next year's Cellaruary. As it is, this beer seems almost harsh and undeveloped. I'm inclined to believe that age will smooth things out and, perhaps, help more flavor characteristics and a subtler mouthfeel.
