A light golden non filtered wheat beer containing 40% white wheat malt. Low hopped, smooth and creamy to the palate with a slight fruity finish.

Taster at Wallace. Foggy golden pour, paper thin head, light lacing. Bready aroma, grainy. Taste brings in some sweetness, bready. Light bodies, dries out towards the finish.

U&I is the second beer that I will have rated from Wallace; however, I have imbibed on several of their beer and have visited the brewery. I am using a Wiezen glass and serving the beer at 42 degrees. The pour created a frothy, foamy, one-fingered head with poor retention. The quick dissipation left a dab of lacing on the glass. The color is dark amber with dark golden hues, transparent, and has an SRM of 12. The overall appearance is good; I have not seen a pale wheat with such a dark color before.
Upon nosing the glass, I smell toasted wheat, floral notes, malty sweetness, phenols, a light fruitiness, and some earthiness.
Sipping the beer, the wheat flavor comes across as cooked bread with some sweetness, followed by notes of grass, herbs, phenols, light fruitiness, and earthiness.
The mouthfeel of the beer is crisp and dry, with a finish. The body is medium-light and has medium carbonation.
Final Thought: I am unsure what to think of this beer; it is refreshing and simple to drink. The wheat profile is different than what I was expecting. I'm not sure where the light fruitiness comes from, but it's drinkable.
