Slightly hazy medium yellow with a fizzy and fairly persistent white head. Aroma is coriander and hay. This follows into the taste with a dry, tasty yeastiness. This is followed by notes of lemon zest, green apple, and white pepper. Earthy/flowery hop bitterness balances the lightly sweet honey in the body. The body is thin and full at the same time with a light creaminess. Finishes dry and sweet with lasting hay and coriander. Delicious Belgian ale in the style of a Saison. Reminds me of cross between Saison Dupont and Celis White.

From the stubby bottle in a snifter. This solid little table ale pours a
lightly hazed amber tinged straw color with a nice head of white foam
that settles to a thick ring, thin clumping layer, and displays some nice
lacing. Nose of lemon zest, orange zest, coriander, cracker, and subtle
herbal hops. Flavors follow the nose with herbal hops, light orange zest,
lemon zest, coriander, cracker, subtle candy sugar, and faint banana.
Mouth feel is light, medium effervescent mouth feel, and finishing
a hair thin and subtly dry.
Overall, glad to have tried it, but was not what I was anywhere expecting.

Copenhagen 14/3 2016. 33 cl chubby little bottle from Fakta; Frederiksborgvej, Kbh. NV. A golden version of Chimay's usual brand design.
Pours hazy yellow with a white head. Stable and fluffy. Settles as a 0,5 cm thick layer of foam. Substantial lacing.
Aroma is sugary with a lot of citrus and fresh green Apples.
Medium strong carbonation and slightly thick palate. Lightly tingling texture.
Flavor is sour and a little bit spicy. Citrus and ginger. Quite sugary aftertaste.
Not my favourite Chimay. Too much sugar and artificial citrus.

Brewers notes Brewed from very similar ingredients as the Première but paler and spiced with coriander. It was intended only to be consumed by the abbey monks or at the nearby inn Auberge de Poteaupré, which is associated with the abbey. The Dorée is now widely available to consumers and can is enjoyable as as a refreshing dessert beer, because it is lower in alcohol content than the rest of the Chimay family ales. Pours golden with a one finger white head. Nose is pears, peach, and white grapes from the Belgian yeast, mixed with some earthiness. Taste opens with a nice pop of light stone fruits and white wine hints followed by a soft earthiness and a faint pale malt. Body is light to medium with medium high carbonation. Ends with a lingering soft maltiness and mineral carbonation. Overall a very nice Belgian pale/single that is so easy to drink. If I could get this easily and cheaply, it would be a contender for an everyday session beer.

Frothy and pale yellow… light malt and light body behind heavy coriander spice… a little yeasty, perhaps some lemon and hay notes. Fairly dry overall.

Mostly clear, lightly fogged pale yellow with a soft white head.
Kind of like a lighter wit, coriander, lemon rind, and hints of wheat but also corn are contrasted by a touch of bitter grass.
The light body froths up fairly well before finishing semi-dry.
