Unblended 5 year old Lambic, brewed in 2014 and first bottled in 2019.

Bottle: Poured a dirty golden color lambik with not much head with light retention and very light lacing. Aroma of funky ester with some tart notes, some oak and a dry finale. Taste is a mix of funky ester with some oak and very little acidity and a dry finale. Body is pretty full for style with good carbonation. Very enjoyable lambik.

Bright brassy golden orange, little to no bubbles, some rising bubbles visible.
Light green bottle skunk, limoncello and oak.
Lemon, white grape, orange wine, caramel, honey aftertaste. Light oxidation, but very mild. Easy to drink, light enough with plenty of complexity. Interesting to try, cidery and tasty though more of a novelty.

This was the 2014 lambic bottled in 2019. Completely flat but very tasty, deep funk, apple, really nice example of a straight lambic and you could tell it was oude.

A 750ml corked and caged bottle, 2014/2019 vintage, with a best before date of March 2039. Poured into a 3 Fonteinen gueuze glass.
Appearance: A mostly clear golden orange colour with pretty much no head and no lacing.
Aroma: Funky, musty, damp wood, wet hay, lemon, green apple, with some light mixed berry notes.
Taste: Funky, tart, a touch sour, musty damp wood, apple, citrusy, lemon, orange peel, and a touch of berries.
Mouthfeel: Medium bodied with no carbonation.
Overall: I usually prefer carbonation in my drinks, but this was good, enjoyable and thirst quenching.

And thus, on the palate, it's essentially still, and also very mild. It's almost like mulled pear cider with accents of nectarine and the very faintest level of damp oak. Any funk has entirely receded to only further amplify the fruity elements, albeit not without a hint of toasted seed on the nose.
I'd be lying if I said this wasn't a disappointment relative to expectations.
