a fully wild saison type here, and something pretty unique, even as spontaneous beers go. the dude told us he took the wort out to a local farm and let it inoculate overnight. its a simple base, some unmalted wheat character and a simple light pale barley malt, soft and quite hazy from the tap, without much head on it after the initial pour but a cool nose of peppercorn, candied citrus, wet basement, white wine, and dried flowers. there is some cool funk to this and a little acidity too, but it still tastes young to me, like even though these wild elements are alcohol tolerant and actually fermenting, im not sure they are all that well established and evolved yet. i would lay this one down in a barrel for awhile and let it mature, it still has some new stink to it, not unappealing, especially because this is so interesting, but it will almost assuredly improve over time at this point. i could see this being a nice house culture in later generations for wild beers here moving foward, its certainly unique. lemons and cereals and flour, some grassy bitterness, an earthy funk, and some wine tannins happening. cool beer, far from fully evolved and refined, but its cool to see these kind of beer making practices proliferate in areas with cool agricultural potential and relatively unknown wild yeasts. i dug this, and hope to catch it again in a more finished form! this is a blue print for a great wild beer...
