this was a cool little series they had working when we were in, some of their first wild types from what i gather. this one smells like it was mostly fermented with a basic saison strain and then finished off with brett in the barrel, but like a couple of the others they had in here, the brett to me tastes really juvenile, underdeveloped, and just not quite ready yet, like it needs a lot more time in the barrel to work away and evolve. pale in color with an orange hue and light carboation. there is a cool farmy aroma to this, musty but not yet as dry as it could be, some white wine fruitiness and a distinctive canned peach note. a little honey sweetness and earthy wheat in the grain base, and some moderate acidity like this is starting to sour a bit. it smells a little better than it tastes, like there is a lot of brett in here but it hasnt done its thing all the way yet, its kind of yeasty in an unflattering way, and the esters of the saison strain are there as well. for now this one didnt wow me, but i think it has potential long term, much like their spontaneous. i hope they kept a few barrels squirreled away...
