really cool to taste this side by side with its sister beer! this one is a little lighter and clearer in the glass, more yellow than gold. its quite a bit more tart too, seemingly picking up some bacterial element in addition to the saison yeast and the brett in the barrels, but not super mature either, and sort of new and fresh. i like what the acidity adds, a summery lemon complexion, tannic white wine, and an element of refreshment that isnt there in the other one. it also helps me get past that new brett vibe a little easier that turned me off in the first one a little bit. i still think this beer would benefit from more time in the barrel, but its closer to being ready for drinking now than the other one is, drier too, even almost crisp feeling for what it is. there definitely are a lot of fermenting agents at work here, but the beer overall is quite cohesive, and its something a little different, especially for what i know about peace tree. this would be an awesome base beer for fruits like apricots, white grapes, or plums! woodier than the first one too, at least to me.
