Indigenous yeast saison, gleaned from local Chardonnay grapes, this is just so darn drinkable, not slipping into bonafide American wild ale acidity/sourness, but instead retaining some rustic bread-like malt character. That said, the impact of the native yeast is clear, a dry, earthy funk present, nothing untoward, just lightly complementary. A tartness and acidity are present too, just enough to give the beer some brightness and lift. Straw colored, thin layer of foam that hangs on just enough. Something you'd love to find yourself sitting under an oak tree with, drinking by the glassful. Wonderful.
