Served On-Tap
A — Pours a dark brownish hue nearly black, but not quite. There is a creamy light brown colored head that is quite tall and sits on top of the beer, leaving behind some consistent spots of lacing.
S — Smell is roasted, dark, bitter, astringent, malt vinegar, pepper, pink peppercorns, Belgian yeast, lightly phenolic and spicy with an overly roasted malt compliment.
T — Taste is bitter, roasted, dark, chewy, astringent, notes of bitter oak, unsweetened dark bakers chocolate, balanced with a sour vinegar tinged twang, some lemon juice tartness on top of a slightly peppery and yeasty base.
M — Medium bodied, a little bit light, prickly ample carbonation.
O — Good overall, though it is an odd mix of flavors, dark, roasted, charred, lemony, tangy, sour, yeasty.

Big foam-up at first couple of pours, but it gradually settles down. Dark beige foam is not so long-lasting later on. Dark murky brown. Aroma like a mowed lawn in the fall clogged with wet, decaying leaves. Spritzy on the tongue.
Quite dry, and that is accentuated by the Belgian effect. Acorns (e.g. Craftsman Acorn Saison) and grape stems. A touch of pineapple juice. The grain is quite darkly roasted. They don't say what the spice flavoring is. There is something woody, and also quite tart, so I'm thinking dried rose hips. This is not much of a pleasure, but anything for research. From the 750 ml bottle purchased at Special Brews in Lynnwood.
