interesting this is listed under stillwater, when the bottle and the label and everything about it seems to indicate it was made at and mostly by the italians, but thats cool, the beer is amazing regardless of where it is listed. i am not sure i have seen a beer use 100% oats before, i thought it was a near impossibility, with a real sticky mash, not a lot of fermentable sugar, and so forth, but they have figured it out in a wonderful way! this beer is truly amazing, and really something quite different. milky hazy brew, still more light and delicate looking than anticipated for all oats, there is a bit of sediment, and a very pale straw shade, but its not all that gnarly for what it is. the aroma is interesting here, starchy and sweet from the oats, with what appears to be a sort of wild saison yeast strain with a little rustic funk to it and a grassy hop as well, very earthy, well put together for sure. the flavor is the same, the oats give it a cool earthy cereal low end, uncommon in this concentration, i think the yeast is a perfect fit too, it dries this out like crazy, and adds a complimentary earthy aspect, old school. the high carbonation also provides the needed lift to keep this from feeling too heavy. the oats might not be as flavorful as some malted barleys, but i will say that the texture they provide here is entirely unique and really awesome. overall i found my little bottle gone way too fast, this was both delicious and drinkable, and what i would absolutely call a highly successful experiment with the 100% oat makeup. stillwater keeps the amazing collaborations going, and toccalmatto keeps sending unique beers to the states. a real winner here, definitely dont be turned off by the weird label art, this is a beer experience you owe it to yourself to have!
