A blend of lambic beers brewed at 3 Fonteinen, with an addition of 30% whole fresh raspberries from the fabled Payottenland and 5% sour cherries. This unfiltered beer will enjoy a spontaneous refermentation in the bottle. No artificial colors or flavor enhancers are added. Lambic is brewed only from 60% barley malt, 40% unmalted wheat, hops and water.

In commemoration of the late Gaston Debelder, founder of the 3 Fonteinen blendings

750 ml bottle poured into a red wine glass (not all at once!). 2018 vintage, best by 2038. I've had this bottle since 2020 and figured it would be better not to wait too long to drink, in case the fruit fades over the years. Pours a clear pink color (at least until reaching the plentiful sediment lower in the bottle) with a quickly fading head. Aroma and flavor feature bracing acidity, sharp oak tannins, leather funk, background malt, no hops to speak of, and a surprising amount of bright raspberry flavor. Very low carbonation, maybe 10-15% of most beers, giving it almost but not quite a flat mouthfeel. It took a few sips to get used to but didn't detract too much from the overall enjoyment. Overall it's not for the faint of heart, and for fans of the style, this is a stellar beer. Great stuff.

I was fortunate enough to find this while I was in Barcelona, especially considering its age. I am using a tulip glass and serving the beer at 44 degrees. The pour created an airy, foamy, half-fingered head with no retention. The quick dissipation left no lacing on the glass. The color is a murky, reddish-brown with no clarity. The beer does not look appetizing at all. I will give this overall appearance a 4, with some skepticism.
Nosing the beer, I detect cherries, raspberries, lightly toasted malts, earthiness, barnyard funk, acidic acid, lemons, and a light yeasty note.
Lemons, berries, cherries, light toasted malts, acidic notes, barnyard funk, earthiness, a hint of phenol, wood, and leather dominate the first sip.
The mouthfeel is mouth-puckering sour, finishing crisp. The body is light and has low carbonation.
Final Thought: The beer has a sour component that is not for the faint of heart, coupled with its low carbonation, which took me by surprise. The beer is not the prettiest to look at, but it is complex. The fruit component is tarty and fresh, adding the much-needed subtle sweetness to help balance this beer out. The more I sipped on it, the more I noticed an odd flavor that had a funky horse blanket vibe mixed with old wood — a unique beer, for sure.

Fantastic beer. Pours deep, ruby red with little opacity. Notes of fruit in the nose but also slight vinegar and even beet. Sharp, bright flavors of raspberry & strawberry contrasted against a hint of deep, robust cherry. Slight hibiscus, funk, and hay - along with a slight taste of beetroot.

Extremely sour but great mouthfeel, love this beer.

Poured from the 375 ml bottle, Blend # 75, season 17/18, dated 13/09/18
A - Garnet red, a bit of haze, gentle carbonation assembles into the faintest ring of evidence.
S - Rapsberry, a bit of oak, some dark cherry skin, some vinegar, with some warming the oak and tannins are more pronounced.
T - Cherry, oak, a bit of hibiscus, young claret, up front, then the rapsberry plows through, surprising how the flavor "moves". Tannins are next, with that woody element stopping in.
M - Medium in body, sharp on the palate, tension like Sharks and Jets street dancing in there. A fantastic Cherry/Rapsberry finish. Stunning how expressive the fruit exit is. Then a lighly acidic, mineral chalky finish
O - A fantastic offering, depth and range are delightful, from the obvious fruit elements to the oaky, chalky element
Tart while leaving all your enamel in place. I am struck at how richthe flavors are

Murky red/brown color. Thin head that quickly disappears. Raspberry, cherry, and barnyard in the aroma. Sour, fruity with vinegar like acidity. Very complex.

poured from a corked and caged 375mL bottle (19/20 season bottled on 01/07/20 [July 1, 2020 for us ‘mericans]) into SP LC stemmed glassware. pours a beautiful, cloudy ruby red with a thin off-white foam cap that fades into a thin collar around the rim of the glass. sweet raspberries on the nose and taste. some oak and funky lambic in there as well. fairly sour but so damn good. full mouthfeel. was so happy to find this one on the shelves. it did not disappoint!

Bottled in 13/9/18. 375 ml. I was saving this for beer #2000. But I guess I missed that milestone.

Poured into my cascade 8 oz glass.

Body is a vibrant ruby red to dark pink color. Pours absolutely flat with no head.

Nose is of an authentic Belgian lambic. Cheesecloth, oak barrel, vinegar, and Belgian funk. There is a soft raspberry background. Overall the nose is soft vs pungent and I'm not getting any cherry.

With the initial flavor the sour aspects from the lambic hit hard. There is a lot of sour cherry there. There are vinegar overtones that accent the sour flavor. The sour raspberry comes through for the finish and the sour fades temporarily and fresh fruity and juicy raspberry comes through along with a woodieness from the barrel. Left to linger long is a little bit of everything I just described.

The feel is somewhat thin and vineagary. The carbonation is present but very soft which is welcoming considering the consistency of the liquid and the sour punch the flavor packs.

Overall this is a fantastic classic Belgian lambic made like only the best Belgian breweries can make. I've been looking forward to this one for awhile and I am very happy I got to try it. Very classy. My only slight gripe is in the consistency of the mouthfeel- otherwise this is one of my favorite fruit lambics.
