For this Single Barrel Pedro Ximénez, we bottled a unique and outstanding barrel of Ximénez-Spínola, and a liqueur de tirage to create a gentle carbonation and to push out the subtle barrel notes. This bodega is quite unique as it makes very refined sherry wines exclusively with PX grapes rather than Palomino. We put a three-year old lambik for more than a year on this barrels before bottling, rendering the weighted age of the lambik to almost forty months.

Mostly clear shimmering amber with a short off-white head that condenses to a thin but persistently fluffy blanket that's lightly tufted up at the edges.
Contrasting elements of bright orchard fruits and nutty oak are delivered by a surprisingly zippy effervescence that helps avoid heavily sweet or overly earthy sherry characteristics.
While caramel nougat does tease the nose, a refreshing sparkling strawberry wine sort of essence bounces on the palate.
It's too bad they had to resort of layoffs, because this beautiful brew is one of the most complex yet drinkable lambics I've ever had. It's absolutely crushable for how much is going on.
