For this specific Zenne y Frontera, we blended not less than seven barrels of Oloroso from the Josefa Perez bodega. Situated in one of the oldest quarters of Jerez de la Frontera, in the shadow of the Iglesia de Santiago, most of the barrels were sold in 2006 to Urium. Today, the family keeps a low inventory of barrels and sherry to provide us with. We used lambikken originating from seven barrels and eleven brews; more than 60% of the cereals were grown in Pajottenland. The weighted average of this blend upon bottling was about 36 months. A small part of the blend was bottled on magnums.

Beautiful deep golden pour. Carbonation build up is great on an agitating pour, and settles into a tight-forming circle around the liquid in the glass.

The nose on this is exceptionally complex - really a beautiful feature of the Oloroso. Notes of balsamic, spiced fruit, candied walnut, wet leaves, and a touch of tobacco smoke. With a bit of warmth, a more perfume-y characteristic comes to the forefront on the initial inhale.

The palate - while distinctly more of a showcase of the gueuze - also brings with it that amazing Oloroso influence. Dry, autumnal flavors lead the way, followed by a more vinous character softened by undertones of tart cherry, sherried walnuts, balsamic vinegar, and a touch of musty funk.

The mouthfeel is bright and dry, with tart carbonation that actually comes on with a bit less aggression than the initial *pop* of the cork would have led me to believe. Long, tannic finish, with a touch of ethanol heat as it goes down.
