From one-off to once-a-year to year-round, our 300 Mosaic IPA has become one of our most acclaimed beers.
For this variation of 300 we left everything alone in this award winning beer with the exception that we fermented it on ridiculous amounts of pureed mango. The result? A subtly different and completely complimentary spin on your favorite Mosaic IPA.

16 ounce can from the Boise Co-op Meridian. Orange golden pour with a mild Haze and a huge towering Rocky head. Aroma is a bit of bready malts and some light tropical fruit notes. Tropical notes carry over to the taste for an initial sweetness, which quickly turns into a flat dry bitterness from the Hops. This is the opposite of Juicy. Still trying to figure out if I like this or not, the dry finish is a bit rough. Also note that it was cammed and November of 2018, and was purchased in March of 2019.

16oz can. Poured out a clear, golden orange color with a small, off-white head of foam. It smelled of mango, orange and toasted caramel. Sweet mango taste with zesty orange and toasted caramel.

16 ounce can into tulip glass, canned on 11/28/2018. Pours lightly hazy/cloudy deep golden amber color with a 1-2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy mangoes, red grapefruit, tangerine, lemon, peach, pineapple, apricot, passion fruit, papaya, melon, guava, blueberry, citrus peel/rind, wood, peppercorn, pine, cracker, white bread, light honey/toast, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/earthy hops, mangoes, and moderate pale malt notes; with great strength. Taste of huge juicy mangoes, red grapefruit, tangerine, lemon, peach, pineapple, apricot, passion fruit, papaya, melon, guava, blueberry, citrus peel/rind, wood, peppercorn, pine, cracker, white bread, light honey/toast, and herbal/floral/grassy earthiness. Moderate pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of mangoes, red grapefruit, tangerine, lemon, peach, pineapple, apricot, passion fruit, papaya, melon, guava, blueberry, citrus peel/rind, wood, peppercorn, pine, cracker, white bread, light honey/toast, and herbal/floral/grassy earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, mangoes, and moderate pale malt flavors; with a great malt/bitterness balance, and minimal lingering hop astringency after the finish. Moderate increasing dryness from lingering bitterness and carbonation. Medium-plus carbonation and medium body; with a very smooth, moderately bready/grainy, and crisp/sticky/resinous/rindy balanced mouthfeel that is great. Minimal warming alcohol for 7%. Overall this is a fantastic fruited IPA. All around outstanding complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, mangoes, and moderate pale malt flavors; very smooth, crisp, and easy to drink with the moderately bitter/resinous/drying finish, not overly aggressive. Amazing mosaic showcase. Extremely juicy, vibrant, dank, and earthy hops/fruit; with a nice solid pils malt backbone. No residual sweetness from crisp resin dryness. A highly enjoyable offering, and spot on west coast style example. Loved the hop profile as expected.

Pouring from a 16 oz. can into a Willi Becher glass, this beer pours out golden and forms two fingers worth of rocky, active, off white colored crown. I can see my fingers on the other side of the glass, but wouldn’t call it clear. Leaves spotty lacing.
The smell brings fruit mixing with some bitterness. Pine, mango, orange, juicy. Some syrupy notes.
The taste comes in with pith, resin/pine, some mango in there.
Hop bitterness present in the mouthfeel. It gets smoothed out as it goes through. I’d say it’s more dry on the finish rather than wet and sticky.
Overall, this is solid. A bitter background all the way through makes it more oldschool than the new stuff. Wish the mango came through a little bit more but it does come through and smooth the bitterness out some.
