Nonconformist 07 is a particularly delightful representation of timing, chance, and creativity. We filled wine barrels with Of First & Last Things—our IPA with Motueka™, Nelson Sauvin, and Simcoe® Hops—and allowed it to rest for nine months while developing nuanced acidity from the metabolic contribution of our resident microflora, after which we aged it further with organic Tulsi powder and organic Lemon Balm, both from Foster Farm Botanicals in East Calais, Vt. After a year of careful monitoring of its in-bottle evolution, we’re pleased to share this singular, enchantingly complex creation.

This one pours a slightly hazy golden orange, with a small head, and a little bit of lacing.
This smells fragrant and spicy, sort of basil-ish, herbal, and funky.
Tulsi and lemon balm are certainly unique additions to this beer. I love their BA IPAs, with the herbal addition adding really well to the funky citrusy and pineapple-heavy vibe of the base beer. Tulsi appears to be somewhat like basil, and I definitely do get a fragrant basil note. It’s lemony, herbal, and spicy, with a touch of oak on the end.
This is light bodied, soft, and citrusy, with a pleasant acidity.
This series is always bound to be interesting, and often very tasty.
