Farmstead® Ale Brewed with Organic Oats, Barley, and Sorghum Syrup and Aged in Wine Barrels
Joining our series of unconventional and creative ales, this newest entry is a Farmstead® ale aged in wine barrels for nearly a year. It was brewed with organic flaked oats and a small amount of organic barley and was carbonated with organic sorghum syrup from the legendary Blue Hill at Stone Barn and Stone Barns Center for Food & Agriculture in Tarrytown, N.Y. This is also a lower-gluten offering, lab tested at 100 parts per million; it is not gluten-free but substantially lower.

This one pours a dull looking murky orange, with a very small head, and not much lacing.
This smells kind of weird – I could not tell you what sorghum syrup actually tastes like, but this sort of smells like champagne that was left out too long, apple cider vinegar, and oak.
I absolutely love Hill Farmstead, but this was a hard miss for me. I like the idea of using something as off-the-wall as sorghum syrup in a wild ale, but I think the fermentation outcome of all this weird surgar just meant it sort of tasted like cheap wine mixed with apple cider vinegar. It tastes almost like wet paper too – not cardboard-like, when something gets oxidized – this is separate and distinct from that.
This is light bodied, not highly carbonated, and not that drinkable overall.
There have been some verified bangers in the NonConformist series, but then there’s also stuff like this too, unfortunately.

Semi-clear gold orange appearance, khaki head, medium body and carbonation. This beer just doesn’t do it for me. Can’t taste any syrup, any wine barrel, any malt. Taste didn’t unfold even as it warmed. Nothing offensive, just a little underwhelming.
