The classic Bavarian wheat beer! Notes of clove and banana. Single decoction in the brewhouse, open-fermented with a monastery brewery yeast from Munich, and served with a billowing fluffy head.

Poured from a can dated "born on" 07/06/22 into the test glass.
A - Lovely clear goldenrod color, excellent clarity, gently carbonated. Initial pour yielded a 1" white cap, which quickly exited.
S - Certainly classic in the banana, and hint of clove, Add to that a simply elegant grainy thread, and there you have it
T - Sweet grain, banana, a bit of spicy white pepper, lite bready element.on a side note the burps are spicy banana!
M - Delicate, light on the palate. being gently carbonated the texture is smooth, with a lemongrass linger
O - A lovely warm afternoon beer. Well done in every aspect

On tap at Notch Brighton
Another wonderful day visiting Notch before a nearby concert. I’ve never even knew Notch had a Hefeweizen, so I knew I had to order it the second I saw it. Let’s see what it’s all about
Pours a cloudy yellow gold with 2 fingers of creamy white head that fades to a thin cap and leaves decent lacing
In the nose I find it’s not as ester-y as many others in the style. I’m picking up on aromas of bready malt, honey, earthy wheat, overripe banana, light bubblegum, and toasted grain. It’s not massively different from others, but the deviation is much appreciated
It’s a bit restrained in taste too, mostly up front, but it doesn’t quite work as well as the aroma IMO. On the front end of the sip I’m tasting bready malt, lemon zest, toasted wheat bread, banana, and sweet honey. The swallow brings notes of overripe banana, earthy wheat, clove, toasted grain, lemon zest, coriander, and light toffee
A light medium body pairs with gentle carbonation, resulting in a smooth and silky beer. Finishes a bit sticky but nothing that kills the drinkability
This one is damn solid. Not the best I’ve had from Notch but I certainly enjoyed it

Smell was honestly a little overpowering . First sips: soooooo banana. (When bananas first arrived in Munich, did they call them hefeweizen-fruit?) Making my way through it, of course there's more to it than banana. Other reviewers have named the flavors better than I can, but banana cream with a little lemon is not far off.
This is the first hefe I've had that didn't leave me saying "why didn't I just get a six-pack of Weihenstephaner." It's a treat to have this so fresh. (Draft at the Brighton taproom)
Edit: drinking a can pour at home now. Significantly different experience: a lot less banana, more kinda-citrus, a little malt peeks through. Still very refreshing and overall excellent.

Pours hazy, gold in color with one quarter inch head. Taste is big banana, clove, coriander. Medium body, moderate carbonation, sweet. Excellent domestic version. I need to suck it up and get a subscription. Delicious.

Pours a light fizzy foamy almost 1 finger head with med retention, a bit of lacing, mostly clear slight hazy light golden tan color
Nose brings that classic Hefe, I'm guessing yeast from Weihenstephaner, fruity esters with mostly banana, some mild spicy phenols like clove, creamy doughy wheat, a little vanilla icing and honey cake,
Taste brings more of the same greatness, some creamy doughy wheat up front, more of that honey cake and vanilla icing characters, fruity esters bring mostly banana, a touch of citrus orange, a light bitterness, then some phenols later with a touch of clove and spice again, soft finish with creamy wheat, more vanilla icing and banana
Mouth is med to lighter bod, med to higher frothy carb almost effervescent
Overall this was a solid hefe, and back into the greatness I know Notch has, def one of the most underrated breweries in MA.
