Notch Brewing

We used our classic techniques of double decoction, open fermentation and extended conditioning in horizontal lagering tanks, along with classic ingredient of Czech floor malted barley and Sladek hops. But we fermented this beer with a yeast strain once used (and no longer used) by the original Pilsner brewer. It's an exercise to show the importance of a yeast strain on the flavor profile of beer, especially something as delicate as a pale lager.
