Cellar Reserve Rel. # 15 "- Vintage 2020
It's a Belgian Sour Ale aged in oak with Guava and Habanero pepper.
On the nose, explosion of Passion fruit (actually Guava, but releases a very similar tropical scent), light almost lactic acidity.
Abundant but evanescent foam (little more than that of a Crodino): it disappears by itself in no time.
Intense red color, almost ruby red, with backlit copper reflections.
In the mouth, beer with a light body and a sharp taste.
Tropical fruity note in a very short opening immediately devoured by a really astringent acidity that it seems to prick the tongue before leaving it dehydrated.
Fruity and chilli on the palate, while the tongue remains dry and dry with the acidity that gives a strong lactic sensation seems to take the path of fracic (wet) wood.
As the beer warms up in the glass (I had put it in the fridge for 25 minutes, just fished from the cellar) on the finish a pleasant spicy note is appreciated that almost tickles the tongue after the sharp acidity that characterizes the central part of the drink.
Complex beer, not easy to drink but which represents very well what I was looking for when I chose it... For my personal tastes it reaches that excess and at the same time offers a range of flavors that literally makes me high.
It has aged perfectly, the acidity has a strong and sour intensity but at the same time it does not "burn" the taste of fruit and habanero pepper, whose taste over time is increasingly clear and leaves a pleasant spiciness even on the lips .
Also notes of cereals (wheat) in the background.
Complex, very acidic, fruity and spicy. Notes of wood that over time try to add a touch of elegance, but the acidity is truly arrogant.
