From notes 11/16/15: This brew pours a chill hazed deep straw/pale gold producing 1.5 fingers of fizzy, short-lived, white head that leaves no appreciable lace behind. Aroma is barnyard wet hay, earthy and phenolic (Band-aide) Belgian/wild yeast funk, fruity tart citrus (lemon/lime) with hints of white fruits, peppery spice, egg whites, thin banana and coves; no hops. Taste is green apple and citrus, Brett-like mustiness from the wild yeast used; Band-aide phenolic, earth with less intense fruitiness than found in the nose. A mineral note and hint of grapefruit become apparent in the dry finish. The short-lived but very dry aftertaste is earthy, phenolic and lightly fruity. Mouthfeel is light-medium bodied with a carbonation heavy peppery bite it is lively in the mouth, prickly, tight and dry. Nice.

Pours a murky gold with high carbonation. Some funk and pepper on the nose and taste is much of the same. Lots of tasty esters, mostly pepper but some fruit stuff is present too. A good beer to sip on with lots of flavor but light enough in abv.

Appearance: Pours a hazy golden color with an impressive head; streaks of lacing linger
Smell: Has a nice Belgian yeast and rye bread character
Taste: Bread and stone fruit forward with spicy phenols building through the middle; a grassy hop element adds a nice balance to the finish
Mouthfeel: Medium body with moderate to high carbonation
Overall: Refreshing with good complexity; the best Saison I have tasted from an NC brewer in quite a while
