Notes: Saison ale Brewed with rice, yuzu Juice, yuzu zest, and Szechuan peppercorns, and fermented with a mixed culture, and aged in wine barrels.

This 10th anniversary iteration Wachu Saison was conditioned in wine barrels for 15 months. This collaboration was first brewed in 2011 and reunites Shaun E. Hill and Ryan Witter-Merithew. Familiar ingredients, fresh context, and a new stage of friendship and a decade of reflection.

Grassroots Brewing was the conceptual precursor to Hill Farmstead Brewery. Over the last decade it has evolved into a parallel brand and domain for creative collaborations.

Bottled April 12, 2021.

Moderate to vigorous pour yields a 3/4 inch white head over a hazy straw colored body with lacing.

Nose of citrus (mostly grapefruit) and white wine (Pinot Gris, methinks.)

Taste is very wine-like, with grapefruit and a bit of yeast flavors as well.
Finish is slightly sour grape.

Very nice feel as in most Hill collabs.

Overall, quite a gem and quite delicious.
Go out and find it!

Pours a hazy light golden color with a nice head and lacing
Aroma has yeast, floral and wine hints
The taste follows the nose with a yeast, floral and wine flavor
A light bodied well carbonated beer

Any time I go to the Hill I am willing to try just about anything. This was one of those anything’s and it was just OK for my taste buds. I recognize that there was a lot good on in this beer as it was complex. Other tasters likely loved it, just not me.

Light golden body, slightly cloudy; dense, lively carbonation; thick head, white and creamy. Nicely balanced aroma; lemon tartness with a semi-sweet white whine component; mild horse blanket element; light touch of oak. A beautiful sour taste; lemon and spritely tartness; sweet Riesling note. Medium mouthfeel; moderate tartness; semi-sweet.

This beer surprised me a a good way. For some reason I thought it would be inferior with the 2020 edition (no basis for this, just my weird prejudice), but what a delightful surprise! This is an incredibly tasty sour beer. The wine barrel aging brings some extraordinary smoothness and balance to this beer. Yes, it's a sour ale, but goodness, the sourness, the tartness, is well-balanced and allows a lot of transparency for the other characteristics to present themselves. A truly delicious and delightful beer.

Surprisingly transparent gold with only a waxy sheen under the very short and quick to fizzle out bubbly head.

Very wine barrel aged indeed, and nearly acetic, it's quite sour, vinous, but syrupy in its citruses, and not really all that complex or funk relative to all its added ingredients.

The acidity decreases over a session, though, and opens up orchard herbality, allowing it to become more oaky and a little peppery as it warms, but delicately so. Its fine yet firm fizz comes to a semi-dry finish where a touch of damp biscuit dumpling comes out in the exhale.

375 mL bottle. Clear pale yellow. Smells of wine barrel, deep earthy notes, pepper and citrus. Tastes of strong pepper and white barrel. Citrus brightens it. Earthy yeasty notes keep it dynamic. Lingering wine barrel. Medium light. Excellent.

Looks golden and yellow. Smells of lemon citrus. Taste bitter and citrusy. Overall was not a bad beer.

This one pours a hazy golden yellow color, with a small head, and lots of lacing.

This smells like candied yuzu, lemon peel, citrusy funk, white wine, oak, and a light grassiness.

I don't really get any peppercorn on this one, but the yuzu shows itself pretty nicely on this, adding a unique citrusy character that's somewhat distinct from the usual citrusy/spicy funk that Hill Farmstead/Grassroots usually shows.

This is light bodied, creamy, and bright, with a really nice drinkability.

The addition of yuzu somewhat dampens the impact of the rest of this beer, but it's still a very tasty little beverage.
