In the early spring of 2013, our friend Luc “Bim” Lafontaine traveled from Japan, where he was brewing at the time. More than a decade later, we continue to revisit this fond memory through the recreation of the beer first brewed with him.
From time to time, happenstance and whimsy converge to offer different expressions of this ale of mixed fermentation with lime and blood orange. In this case, two unique barrels arrived, each sympathetic to Brother Soigné’s characteristics.
This iteration of Brother Soigné was aged in freshly emptied London-Style Lime Gin barrels.
These ales continue to embody the spirit of perpetual creative collaboration in conjunction with disciplined brewing endeavors.

This one pours a golden and slightly hazy orange color, with a small head, and lots of lacing.
This smells very citrusy, lemon rind and fresh squeezed lime, juniper, bready malt, hay, white wine, and oak.
The mezcal barrel aged version of this one did more divergent things than this one does, compared to regular Gin Soigne, but this definitely does seem to dial up the citrusy and vibrant aspects that already there. It’s got a great citrusy and hay-like funk to it, with a minerally dryness, juniper, and a nice oakiness.
This is light bodied, even slightly creamy, with a great drinkability.
This is a nice update to an already fantastic beer – of course I was going to like it!
