Pseudo Sue Mosaic Dry Hop from Toppling Goliath Brewing. 12 fl oz can, part of a mixed 12-pack, picked up at Franklin Beer, Franklin, PA, 10/11/25, $ 24.00 (including tax)/$0.167/fl oz. Reviewed 10/12/25, review 3654. Note that I use DD/MM/YY protocol.
“PKG 04/15/2025” stamped on bottom. Stored at home at 37 degrees F. Served at 42.6 degrees F in a hand washed and dried Jester King snifter. The final temperature is 46.5 degrees F.
Appearance – 4.
First pour – Straw (SRM 3), hazy. (Unfiltered)
Body – Straw (SRM 3), opaque. Under direct light, the same. When rear-lite, there is enough light penetration to produce a mild glow.
Head – Large (Maximum 4.2 cm, aggressive center pour). Half and half, and medium density with average retention, leaving an 0.3 – 1.0 cm undulating crown, with a complete cap. A jagged band of small to medium bubbles remains as the head contracts.
Lacing – Fair. As the level drops, a band of small to medium bubbles connected to the (above) develops.
Aroma – 3.75 – Coy generic citrus with no malt, no alcohol (5.8% ABV according to the label).
Flavor – 3.5 – Mildly bitter with ghostly generic citrus. No dimethylsulfide or diacetyl. No gastric warming.
Palate – 3 – Medium: Slightly creamy: Soft but lively carbonation.
Style: Follows the BA style description.
Final impression and summation: 3.75 Uncredited label art, same as the base beer. Another iteration of Pseudo Sue, but not as good.

Cloudy yellow color. Medium-sized, white head. Citrus and tropical fruits are in the aroma. Juicy and refreshing. Moderate bitterness in the juicy taste.

Pours hazy bright yellow, thick but short-lived white head. Minimal spotty lacing. Aroma is a mixture of citrus and tropical fruits, and dank pine. Flavor follows the nose with a mix of fruit and pine. Feel is medium bodied, light carbonation. Overall, another nice variation of Pseudo.

2.5 month old can from a "Uncaged" Pseudo Sue mixed pack poured into a tulip. Overall take is a little different than that of the Galaxy and Nectaron variants: doesn't have the slight step-down in taste because of the starchy green element from the DDH treatment in the other two variants, but the nose isn't quite as enhanced versus the OG. Not sure whether that leaves it as a slightly lesser product than the OG Pseudo Sue like I feel the Galaxy and Nectaron versions are (by just the slightest of margins), so maybe this is the variant I've liked the most. But we're honestly slicing hairs here, the gap (if there is one) is so slight. Regardless, it's extremely good and hard to beat for a 6%-ish hazy APA (or even IPA). As with all my reviews of the Pseudo Sue series, really wish there was a hazy APA category to drop this into, as it's impossible to compare a beer like this to a more traditional OG APA like Zombie Dust. But this one grades favorably against any kind of APA even if it's a slight step down from the original.
Golden-orange, pure juice body, medium-plus haze (all in line with Galaxy and Nectaron) but zero starchy murk, which begins to explain the differences. Full finger of initial bright white head that quickly drops into a nice soapy film. Minimal lacing (whereas Nectaron seemed to have some meaningful lacing). Fruit juice all the way. Like regular Sue, has an awesome look for a hazy pale and remarkably competitive versus larger IPAs.
Like the OG, aroma is really wonderful, with huge citrus and big tropical fruit, but not the overripe, overly sweet kind. Definitely some additional mango, berry, and tangerine. Much less deep, dank weediness than Nectaron, but still grassy and dank. A little pine, some nice pineapple, and some berry medley. Absolutely fantastic on the nose and definitely the strongest aspect of the beer. The DDH handling is certainly not hurting the product and maybe even enhancing it.
Like all the others, it's incredibly drinkable and absolutely punches above its weight class on the tongue. Heavy citrus, slightly underripe tropical fruit, very grassy, strong twang of dankness, and a strong mineral note. Pretty dry and wonderfully pithy finish. Tons of lingering grapefruit. Maybe a little more nuance than the OG, as Mosaic and Citra play so well together. But not sure it warrants a higher grade than the OG. Largely avoids the green starchy note that hurts the Galaxy and Nectaron variants, though there's a faint trace of it at the very end of each sip.
Little less thin than the OG in terms of feel, but still a little thin compared to most hazies. Then again...6.2%. Silky and smooth, with a wonderful coating quality. Maybe a step up from the OG. And compared to a typical APA, it's outstanding.
The way I've graded everything (in line with the OG on taste, 0.25 better on feel), my overall grade is going to end up a touch higher for the Mosaic variant versus the OG. Not sure that's totally accurate given the hair-splitting on aroma and taste, but I'm OK having this variant at or better than the OG, whereas I definitely didn't feel that way with Galaxy and Nectaron.

Canned 04/07/2025, into a Troegs pint glass, out of the DDH Pseudo Sue mix pack (12oz).
Pours a light orange with good foam, similar to the Galaxy variant. Aroma is more vegetal and has a good amount of mixed berries, less citrus and tropical fruit than the rest. I think this is the most bitter, as the flavor is incredibly green with crazy amounts of dankness and vegetal brightness. There's some of the berry ideas from the aroma, but it's just so dank there's very little sweetness. Some creeps on in the finish, but it's mostly crushed by the bitterness, and there's a hint of grapefruit rind as well. I think this one finishes the most bitter out of the whole pack as well. Mouthfeel is still the same, plus a little more drying bitterness on the finish than the other 3 variants.
Overall a surprising variant. Out of this 12pk, I have to rate them as follows: #1: DDH OG (Citra). #2: Mosaic, (close) #3: Galaxy, #4: Nectaron. The Nectaron variant just wasn't as overwhelmingly fantastic as the other 3, and I enjoyed the extra bitterness of the Mosaic variant more than the interesting fruit flavors from the Galaxy DDH. Of course, the original Citra DDH is the best, but it's an incredible pale ale, and I think the recipe lends itself the best to the Citra flavors.

I think this is the most bitter, as the flavor is incredibly green with crazy amounts of dankness and vegetal brightness. Some creeps on in the finish, but it's mostly crushed by the bitterness, and there's a hint of grapefruit rind as well. I think this one finishes the most bitter out of the whole pack as well. Mouthfeel is still the same, plus a little more drying bitterness on the finish than the other 3 variants.

Pseudo Sue - Mosaic Dry-Hopped pour a hazy golden color with a large, long-lasting, lacing, frothy head. The aroma is dry, with hints of bitter vegetables. The flavor has a hint of sweetness and dry vegetable notes. Good feel. Overall, it is a very flavorful, strong, pale ale.

Not a baby, born around three months ago. Peach juice like appearance with a thick head with great retention and leaving strong laces.
Tropical and citrusy creamy aroma with predominant notes of mango, pineapple and some dankness.
Flavor with notes of resin, pine, berries, dank, oranges, lychees and pineapple. Quite dry and bitter long aftertaste, but with a perfect balance.
Light to medium velvety body with appropriate carbonation of tiny bubbles.
Similar taste to regular Pseudo Sue citrusy, tropical and mild pine-resiny notes with a twist of berries and faint lychees. I am under the impression that this felt drier. I kind of like the assertiveness of the original.
