another awesome and unique version of this excellent pale ale in here, this time with another new hop to me, finchcocks #7, which i had never even heard of before this beer, these guys are way ahead of things. like with the others, its so awesome to have a well made, dry, and basic from a malt standpoint brew to get the full character of the hops from, this seems to be a pretty amazing vehicle for that, and i was over the moon on it really. the hop is weird and different and kind of tropical without being fruity. someone around me said coconut i think, maybe the dude who poured it, i cant remember now, but i kind of latched on to that, like fleshy white coconut, maybe a a botanical note too like white tea or something, really summery in its essence and like nothing i have known before, herbal and fresh and delicate, so i again appreciate the lightness and simplicity of the base pale. the flavor matches the nose with that curious soft botanical layer, coconut and vanilla again, like a rum drink with an umbrella, and really mild bitterness. its green and new, and there is a sort of lemon curd note too, nice against the earthy dry gain base. such a cool varietal, and like the taiheke in their other pale, i am dying to have more beer made with it. it seems meant for rustic saison to me, but i would be curious to see it in just about anything. i hope this proliferates a little bit. thanks to kernel for this special drinking and educational experience! world class offering. as distinct as the first time i ever tasted mosaic...
