Appearance - Pours a slightly hazy amber with four fingers of frothy white head that leaves some pleasant looking lace on the glass.
Smell - brett yeast, fruity esters, clove, pepper, spicy earthy, citrus and floral hops, citrus and orange peel, and bready malts.
Taste - brett yeast upfront followed quickly into the spicy earthy, citrus and floral hops. The citrus and orange peel alongside the fruity esters, clove, pepper, and bready malts finish the brew off.
Mouthfeel - Medium bodied with moderate carbonation. Finishes sticky with the brett yeast, fruity esters (clove, pepper), and hops lingering.
Overall - A very flavourful Belgian IPA that displays all characteristics to a tee. The citrus hops was a nice touch to this style. A nice find here in Cowtown!

Pours a beautiful slightly hazy orange color with ample frothy head and good
lacing. Aroma is a balance of tropical fruits and funk. Smells like a grandma's
attic. Also notes of pine and cat pee. Taste is very dank. I feel that the Brett
amplifies this taste even further with a drying bitterness. A little bit of
tropical fruits but primarily the beer is dank and a bit funky. I see this
pairing well with a peach and strawberry sorbet. It gets a 81/100.

Appearance: Gorgeous clear golden amber, perfectly produced rich and frothed-milk white head, with a leisurely brisk retention, and left behind an amazing chorus girl fishnet stocking of lace all around the glass.
Aromas: Equal parts of citrus, pine, funk, and a gentle warm breeze of non-descript mildly sweet floral and warm and not half-leavened bread. The yeasts not producing a full dough scent, but the start of one.
Taste: What a great mix. The yeasts, hops, and malts are all partaking in a maypole dance, weaving a number of flavours : in, through, and around one another. The yeast providing both biscuit and a gentle autumn soggy leaf funk, the malts are pale but sweet enough to grab those dimwitted earthy hops arm-in-arm and do-si-do-ing like Bugs did to Curt and Pumpkinhead Martin in the 1950 classic Bugs Bunny cartoon "Hillbilly Hare". The hops and malts not only holding hands but at times trying to take the upperhand - and neither get any further than the other. That my friends is how I'd describe the flavour of this beer. It carries with it a slight air of fruityness - some lemon zest perhaps, and an ever so nutty quality at the end of the mild bitter linger.
Palate: This I think is coming to be one of my favourite palate sensations - a gently carbonation - barely perceptible except in the creamy foam top that is always on the surface, and leads in to a nice smooth buttery medium body. The finish is very clean, dry, and the bitter pretty much disappears within a minute or two, not really staying long enough to witness the next sip to hit the lips.
Overall: Not your typical Northwest Coast IPA at all. This has a fantastic look and great palate, and even the flavour is well crafted. The aromas are fairly middle-of-the-road, nothing really being more-or-less like other beers in this style. Which I think is it's only real detractor - and not quite as rich in those areas that it excels at either, but definitely above average.
Pairing: Warm, hearty, and something with a good savoury profile - so maybe a bowl of pub-style chili, topped lightly with Jack cheese. I'd keep any spices or spicy heat in the mild or mild-medium area if you happen to be a spice-head like me. The extra spice might overpower the palate too much.

Poured a light amber with a bright thin white head. Interesting beer for sure the Saison and Brett really
take it from a IPA to more of a Belgian .

Bottle: Poured a light pale yellow color ale with a nice pure white foamy head with great retention and some very good lacing. Aroma of light dry Brett notes with some white wine notes and dry floral hoppy notes makes for an enticing aroma. Taste is quite complex with nice layers of dry Bretty notes with some white wine notes and light floral hoppy undertones. Body is about average with great carbonation. I absolutely loved the different layers of flavours in this beer.
