Collaboration with Fonta Flora Brewery

We’re very excited to introduce Wanderflora — a collaboration between our wonderful friends at Fonta Flora Brewery and Jester King! Wanderflora is a 100% spontaneously fermented beer where we steeped foraged fennel and nettle from North Carolina and foraged false pennyroyal from Texas overnight in our coolship, as the wort chilled. We then aged the beer in oak barrels for 18 months, and in bottles and kegs for another five months prior to release.

Wanderflora is a very special beer to us. Not only was it made with close friends and was an exercise in patience, it also closely embodies our philosophy of making agriculturally based and foraged beers.

just a really great wild saison here, between two of the best in the game, where is the love here on BA?! i will never understand why some beer skyrocket through the ratings and others suffer, that are seemingly objectively superior, such s this one, whatever, personal preference i guess. i am not even familiar with all the herbs in this one, but i dont need to be to appreciate the beer, as with so many jester king beers, the added ingredients are subtle, and here almost entirely underneath their unique but not identifiable house culture, a cool mix of funky and tart and clean that only they provide like this. the fennel is certainly subtle here, the others seem to add a tea sort of botanical freshness, vegetal bitterness, and almost gruit sort of non hop preservation, old school in that way, old world even, although i am unfamiliar with any beer, belgian or otherwise, that uses these specific plants. tons of funk later on in this, white winey and dry, clearly benefiting from its time in oak, this is woody while also being delicate, hard to do and made obvious here by the yeast, just absolutely awesome. summery to some degree, but also harvesty, light but also hearty, and simple in a sense but also complex, which i think is unique. dry and bubbly, something special here for sure, and while they could have been more robust with the added ingredients, i like how nuanced and united this is, nothing stands out from anything else, but its still so distinct. brilliant liquid!

On tap at Jester King Brewery in Austin, TX.

This one pours a slightly hazy straw yellow, with a small head, and lots of lacing.

This smells very herbal and funky, with lemon, grass, mint, fennel and barnyard funk.

This is a really fun beer that's using ingredients I've never had in a beer before- fennel, nettle, and pennyroyal. It makes a minty, herbal, and super funky, with lots of spice character, some lemon, some grassy funk, and a hint of oak.

This is light bodied, crisp and clean, with a good level of carbonation and a high level of drinkability.

This is definitely beer at it's most fun. Really good stuff here.
