We're pleased to release our next fruited Grisette! Our latest is with Montmorency and Balaton cherries! We added equal parts of each variety to Grisette-style beer at a ratio of about 1.25 pounds per gallon. Our goal was to make a very drinkable beer, low in acidity, with present but not overwhelming fruit character. With an emphasis on balance and drinkability, we primary-fermented the Grisette in stainless steel for a few weeks, then added the cherries for secondary fermentation in stainless as well. Our intent is for our fruited-Grisettes to be enjoyed fresh, while the fruit character is still vibrant and the fermentation character is "clean". It's unfiltered, unpasteurized, and 100% naturally conditioned.

The barely foggy pale peach-salmon body builds a moderately short white head that disperses to a creamy but short curled collar.
A delicate acidity makes for a quaffable sour delivering a mild funk and even a little gassy, Heine-like hops, ultimately creating kriek-Lite characteristics. It's Ultra Lite at that, even at times exhibiting rosé qualities where the cherry seems to emulate a blend of red and white grape containing a little florality.
The medium-light body is given its weight by a crisp fizz that comes to a semi-dry finish.

S: Cherry & grassy notes
T: Follows the nose, mostly tartness from the cherries, a little dryness up front. More cherry tartness, a little sweetness, & dryness as this warms. Some fig notes mix with sweet/tart cherry & dryness in the finish, a little Golden Delicious Apple as well
MF: Light body, low carbonation

A: The beer is relatively clear pinkish red in color and has a light amount of visible carbonation. It left a thin ring of white bubbles around the edge of the glass.
S: Moderate aromas of yeast are present in the nose along with hints of cherries, the latter of which get a tad stronger as the beer begins to warm up.
T: The taste follows the smell, except that the cherry flavors are a bit stronger and also contribute faint hints of sweetness.
M: It feels light- to medium-bodied on the palate and has a low to moderate amount of visible carbonation. There is a slight amount of tartness.
O: This beer smells and tastes first and foremost like a saison but the subtle aromas and flavors of cherries are very interesting and lend some complexity to both the smell and taste.
