Bottled 6/16/21. Purchased at the brewery June 2021. Poured at 55°. My last bottle, cellared for science…let’s see how the coffee has held up…appearance is typical thin dark tan head atop black with ruby edges body; poor cap retention; thin ring, island of micro dots, spots of lace; thin legs and more spots on swirl. Nose is chocolate malt and cinnamon; spicy verde sauce as liquid warms. Entry is chocolate cake batter, semi sweet; bitter roast coffee, hot peppers sauce, vanilla and just a pinch of cinnamon; surprisingly, the backend is oaky vanilla. Smooth, light creamy feel; medium body, not at all adjuncty; moderate minus carbonation; lots of heat in mouth from habanero peppers (more so than from 10.5% abv). Overall a delicious Cake (maybe the best Mexican cake, imo, in the country) variant; yes, the coffee nose is gone and taste a second chair player in this symphony of chocolate cake, hot peppers, spice and barrel flavors; especially the vanilla finish which was a welcome addition; long hot spicy linger; basically a delicious Cake with just a smidge of coffee.
