A 330ml bottle with a bottling date of June 2013 (no visible BB date). Gyle no. 612. Purchased ages ago from the York Beer & Wine shop and squirrelled away in a cupboard. Described on the label as Ilkley's Siberia saison aged in 15yo Speyside casks for 7 months; a collaborative effort with the beer writer Melissa Cole. Due to its age I don't have high hopes for this, but let's see....
A: Poured into a large tulip. Bottle conditioned. A rich, hazy amber hue with plenty of fine suspended sediment and moderate carbonation. Produces a smallish head of white foam that lasts for a minute or two before collapsing and dissipating entirely.
S: Aroma of exceptionally tart fruity notes with hints of lactic acid, earthiness, berries, vague yeast esters, brett, a whiff of marzipan, faint wood and a twinge of spirit in the background. Acidic and funky - not what I was expecting.
T: Tastes of sour, funky yeast with notes of lactic acid, eathiness, yeast esters, sharp fruitiness, mild brett, a hint of wood, faint whisky and a vague whiff of booze. No hop character or bitterness to speak of; a lingering tart earthiness upon swallowing.
M: Mouthfeel is smooth, lightly tingly and very dry, with soft carbonation and good body. Quite astringent; dries the palate. Lacking in texture. Aftertaste of sour earthy yeast notes, mild funk and faint whisky.
O: A bit of a mess, though that's no surprise given the age of the bottle. So-so looks; the lack of head doesn't help. The aroma and flavour are a sour yeast explosion with a touch of whisky cask and little else. Lacklustre body - not enough carbonation. Not a great drinking experience, but that is my fault for keeping it so long. I can't tell if this is infected from the cask or just ages this way, but probably not as the brewer intended. Oh well....
