Berliner style weisse ale with yuzu and chili added.
The code of conduct for the samurai, Bushido, held that the true warrior must show loyalty, courage, respect, integrity, gratitude, compassion, and above all, honor. Same unwritten code went into the making of this beer. A loyal and grateful collaboration with Micah Melton of the Aviary in Chicago and New York. With deep respect and compassion for the ingredients we brewed courageous take on a Berliner Weisse and respectfully added yuzu and chili. The result - Bushido. It was truly an honor.

I admit that I had no idea that yuzu was before having this beer as I had to look it up. Can't say that I ever had anything with that and chili in it - let alone a beer - but this contained both and it was pretty obvious from the moment I poured it out of the can and could smell the aroma through the vivaciously and superfluously bubbly head. This was a Berliner Weisse at heart although it was unlike any that I ever had before.
This had a golden hue to it and was somewhat resinous in appearance. No lacing was left down the side of my pint glass as there was only a few hints of sediment at the bottom of the liquid right before I finished this off. Lots of sour yuzu and spicy chili in the nose as the taste was full of those to an even greater extent. Tangy lime, sparkling apple cider, pear juice, white wine, and oak entered the fray in the taste as this was very spicy and full of kick! There was enough carbonation in this to keep it light with some Sweet Malt to complement the wild array of flavors and burn that lasted well into the aftertaste and beyond.
Because of all of that, this felt *much* stronger than it was in actuality as this was surprisingly a session beer. Pretty sure that I wouldn't have more than one in a session as this almost felt as much as a Gose as a Berliner Weisse. No canning date on the bottom but indeed, this look, felt, and tasted fresh, if that's what this could be categorized as. Give it a go once with an open mind and a glass of water nearby to wash it down afterwards!

Also had this beer over the summer while in Oregon doing the camping trip swing throughout the state. Picked it up in Truckee. This poured a brighter hazy yellow with 1/2" white head. Nice lemon sour and wheat aroma.
Taste was a slightly more sour than your average berliner weisse kind of easy ride. Mild bitterness, pronounced tartness. Cool winter wheat ride. The yuzu and chili are well balanced and not dominating the beer at all, just a mild sweet, sour and mild spicy presence like good Chinese food. Carbonation is evident. Lemon kept on pouring on. These beers where there is a lot going on in a small abv package are nice. This is definitely one of my favorite Evil Twin beers, and while I'm not the biggest traditionalist, I tend to like my berliners around there. Sure, there's some fruited ones that are nice, but once you get into two adjunct territory, you're overcoming a low expectation that it will be good for me. Pleasantly surprised with this one. Good sign tonight, Rosario sure does text me a lot while I write this and take turns playing battlefront with Cole.

The yuzu and chili are well balanced and not dominating the beer at all, just a mild sweet, sour and mild spicy presence like good Chinese food. Carbonation is evident. Lemon kept on pouring on. These beers where there is a lot going on in a small abv package are nice. This is definitely one of my favorite Evil Twin beers, and while I'm not the biggest traditionalist, I tend to like my berliners around there. Sure, there's some fruited ones that are nice, but once you get into two adjunct territory, you're overcoming a low expectation that it will be good for me. Pleasantly surprised with this one. Appearance: Pours a soft, light yellow body, nearly clear, with an initial surge of suds that peters out to nothing.
Smell: Sourish nose with a lactic tone to it overlaying the fruity, vinous notes and vegetal flash of chili.
Taste: Scant, slender malt profile with ultra faint touches of white bread and of wheat. Gripping lactic sourness ahead of the citrus, green apple and white wine tastes. Then, the chili, with a bit of vegetation thrown in and its imparted heat. Brightly acidic, flushing hard with the carbonic acid with all those sparkling suds. There's still some of the earlier wine and orchard fruit, but it's the citrus and accumulating heat that linger beyond the gassy finish.
Mouthfeel: Light-bodied. Well carbonated.
Overall: I'm sorry, I really am, but I am just not appreciating the addition of chili within a Berliner.

Pours a golden straw. The smell is mild, a little yeast, lemon, and some tropical fruit. Sweet, sour, and peppery citrus burn in the aftertaste. I've never had yuzo, so I'm unfamiliar with its characteristics. This beer is very tart. The body is light with modest carbonation. It is interesting to say the least.

Pours hazy piss yellow color with a 3 finger white foamy head that was full of bubbles of all sizes, dissipating as quickly as expected and leaving basically no lacing. Prost!
Smells of lemon zest, tangerine, yuzu, grapefruit, wheat, barnyard funk, wet horse hair, mild spices, yeast, tart citrus and a mix of citrus fruit. The chili peppers did not influence the nose much and it smelt good overall.
Right off the bat the chili peppers kick in with some heat and spices, but the yuzu, wheat and yeast seem to minimize it and allow lemon zest, orange peel, yuzu, tart green apple, cracked wheat and grapefruit to come through. It's tart, then sour, then spicy, then fruity, and basically changing with each sip. Interesting to say the least, but I couldn't drink it all night. A nice spin on the style using some wild ingredients.

This Berliner weisse ours a straw yellow color with a fairly thin white head. The smell is mild, a little yeast and some tropical fruit. It is actually quite flavorful though. It starts with a light grain and yeast and then it progresses into a nice punch of the advertised yuzu and chili. The chili spice lingers. The body is light and the finish is crisp and clean. This is a creative and wonderfully refreshing Berliner weisse.

Pounder can into a snifter appears a hazy light yellow color with a white cap.
It smells like vanilla and lemony lacto but taste has a dusty grain feel with brett, lemony lacto and a peppery citrus burn in the aftertaste.
This is light in body with modest carb. T is interesting to say the least, not sure I need it in my life again.

A: Pours a very slightly hazy pale golden yellow in color with moderate to heavy amounts of fine active visible carbonation rising from the bottom of the glass and faint bright yellow + lemon yellow + straw yellow colored highlights. The beer has a three finger tall fizzy foamy bright white head that quickly reduces to a small patch of very thin film covering a little more than 25% of the surface of the beer and a very thin ring at the edges of the glass. Minimal amounts of lacing are observed.
S: Moderate aromas of slightly sour wheat malts with a light presence of lacto and lemon citrus as well as hint of chili pepper + yuzu.
T: Upfront there are moderate flavors of slightly sour wheat malts with minimal amounts of sweetness and a moderate presence of lacto tartness. Light to moderate flavors of yuzu and moderate flavors of tart lemon citrus. Moderate flavors of chiles with a moderate amount of heat/warming from the spiciness. No perceptible hop presence but the spicy, tart, and citrus flavors linger through the finish.
M: Light bodied with moderate to heavy amounts of carbonation. Crisp with a light amount of acidic prickliness.
O: Very enjoyable, assuming that you enjoy tart beers, citrus, and spicy chiles. Easy to drink with light mouthfeel and well hidden alcohol. I would definitely have this one again as I enjoyed the spicy + citrus tart flavors.
