From Cologne to Rochester! Kolsch is a unique, historical beverage originating out of Cologne, Germany. Light, crisp, and refreshing, Kolsch is brewed with an ale yeast that exhibits white wine, grape-like esters but ferments at much cooler temperatures than a typical ale. Our version of this classic uses all German ingredients including malt, hops and a special yeast strain past down for centuries. Brewed with love along with Heirloom Pilsner and Vienna Malts; Perle, Saphir and Hallertau Tradition Hops; Traditional Kolsch Yeast.

What we have here is a clear, golden brew. SRM 4-5. Sure, initially there was a chill haze, but that passed quickly. Long before the 3” rocky, white head even made up its mind to settle down as a 1” pillow. Occasionally a few small bubbles spring forth, making hay while they can. A latticework coats the Stiegl Stange. And before it’s all done, the head has finally settled to 1/8”, to be slurped away with the last sip.

Hmmm, nice floral hops give a hearty, “Howdy” to an equal partner of minerals. Very crisp. No grape flavor, however, it is reminiscent of Riesling wine. Simple and in yo face at the same time. Get it, the aroma is “in yo face?

Pleasant flavors of floral hops, with nibbling bitterness. Sweetness follows with a light, perhaps unintended, yet welcome apple. Light grains take over, and it is a peaceful revolution, all modest and polite. Some sourdough shows in the long finish. This is exceptionally crisp. Warmth invites faint banana, again, possibly unintended yet welcome.

A light body and soft nylon texture. Alcohol is as expected. Carbonation seems low, soft and palate clearing, nonetheless.
It is unlikely anyone will call this a delicate beer, despite some of my early comments. And yet, this is an easy drinking beer. Am I crazy to want some crackers and ripe brie? Better yet, muscles sautéed in Riesling and garlic. Yum!
