Pours a very pale straw colored body with fluffy white head. Aroma is bright tangy and crisp, very nice. Smooth and crisp on the tongue as well, nice lactic bite with a medium mouthfeel. This is a solid beer.

a collaboration with against the grain, this is an epic saison, one of my favorites i have had this year, although i much preferred it on tap at the brewery to the bottled format i had shortly thereafter. i was really blown away by this one, a barrel aged slightly wild saison, really refined and compelling, as good as the style gets. dramatic yellow color, saturated and a little hazy, but still sort of delicate looking under a bubbly white head, perfectly carbonated. aroma is heavy oak and funk, slightly bacterial, but no more than tangy a little bit, with a lot of funky wild elements to it, not quite bretty, fruity though, and with all the oak you could imagine, super forward in such a light brew. the flavor matches the nose, with vanilla and oak notes all the way through it, making it sort of earthy and weighty at times. there is a great fruitiness too, kiwi and pineapple from the wild yeasts, and a dry cereal base that seems wheat heavy to me. funky like brett, but also somewhat bacterial, lemon zesty but not sour so much, with a very light acidity to it. smooth in feel going down, good structure, but also very bright carbonation, awesome for the style. i am amazed at the wild yeast complexion of this one, its so funky and different, farmy and old wordly, with major fruit notes, apricot, white grape, lemon, pineapple, its insane with all the wood too. a really impressive and memorable glass if beer, some of the best i have had from either brewery involved. epic on tap! near perfect wild saison for my tastes.
