This variation of Liquid Spiritual Delight imperial stout was aged for 26 months in Weller Green Label bourbon barrels & blended with 100lbs of toasted coconut. Sweet bourbon heat melds beautifully with the chocolate & fudge like notes of the beer, with the sweet nuttiness of the coconut finishing it out.

poured from a 12oz can into a perennial snifter. pours an inky black with almost no head. a few thin mocha brown swirls remain in the ominous black liquid. smell is huge but smooth bourbon and oak with subtle toasted coconut and chocolate in the background. everything comes together wonderfully on the nose. the taste has a little more artificial sweetness to it, bordering on that sun tan lotion coconut flavor but never fully getting there. just hints that remind me of it. i’d venture to guess that without the barrel this would be overly sweet but the bourbon and oak cut it precisely how it is needed. this beer has a smooth, full and slick mouthfeel - coconut slick! it’s pretty easy drinking for 11.5% but also a sipper with the bourbon barrel component. it’s not an in-your-face coconut showcase; rather it’s a perfect example of coconut adjunct addition complimenting the base imperial stout and the barrel. somewhat understated, yet highly enjoyable.
