Notes: Just love making IPAs, so here's another one that uses a new hop blend called Zythos that is just delicious and should be enjoyed with a blow-up doll or something similar.

Pours an orangey copper color with a thin white head that dissipates into a nice white film on the beer.

Smell is of pine, citrus, grass, some malty undertones and a hint of skunk. The skunk is a bit off-putting.

Taste follows the nose with a piney flavor coming through initial followed by a grassy bitterness. Not much of the citrus comes through and there is a bit of a skunked grass flavor to the finish.

Mouthfeel was nice and dry with medium carbonation. This would have been more drinkable, but that grassy bitterness made it difficult.

Overall this beer wasn't bad, but it also wasn't anything special. Not a great introduction to a brewery that had been talked up quite a bit.

Poured into a snifter from a 750ml bottle.

Pours a nice hazy amber orange color with a nice golden hue. A slight ecru white head forms that is about half and inch tall.

Aroma of dank pine forest. Nice fresh notes of grapefruit with tangerine and a good malt backbone that adds some sweet caramel notes. Citrusy and sticky icky.

Flavor is delicious. Notes of dank and herbal pine. Resinous and citrus notes are well rounded and lend a nice dry mouthfeel. Very well rounded notes of pine and citrus with a nice lower bitterness level that is not overwhelming. Well balanced caramel malt notes give the brew a nice bready and sweet note.

When many a makers of IPA turn their focus on tantalizing perfumes, juicy fruit flavors and a smooth finish, its nice to see an imperial IPA that hasn't forgot about the focus on hop bitterness.

2nd Shfit's Ratsalad does just this. However, its hasn't forgone the current trends of a bright citrus, tropical and melon fragrance. Hints of herb and grasses peak through stone fruit scents while the ale pours a deep peachy amber color and quickly crowns with a sturdy eggshell meringue. Caramel, granola and sweet nuttiness greets the early palate with a rich malt taste to buffer the tastebuds from the hop onslaught to come.

While the bulk of sweetness holds tight through the middle palate, the waves of hops come strong an swiftly. Bright orange, mango, apricot and nectarine flavors bring that stone fruit influence ahead of the more bright and tropical flavors of pineapple, passionfruit, kiwi and papaya. A follow of cantaloup, chive and fresh grassiness decorate the finish while its bitterness steadily grows into a peppery, sprucy and juniper-like spice.

Full bodied and structurally malty even late in taste, the beer seems balanced with lingers of toasted sweetness, honey and pecan, then countering with fruit, herb and spruce. But the bitterness that simply won't stop. Trending more IPA-like than imperial, the gripping bitterness in finish and a long spicy gin aftertaste saves the day.

Brewed with Zythos hop blend.

On tap at The Bridge, STL.

A- Poured a clear, copper color with a small, tan head of bubbly foam. It left thin rings of lace on the glass.

S - It smelled fruity - mostly citrus fruits like tangerine and grapefruit. Some caramel sweetness.

T - Good grapefruit flavor with a touch of tangerine and pith. A toasty caramel backbone.

M - It was crisp,sharp and smooth. A medium bodied ale with a dry, clean finish.

O - This is a really nice beer. Not sure if it felt like a DIPA but at 8.5% I decided to add it as a DIPA.

Poured from the tap a very lightly hazed orange color with one finger of dense off-white head.

Aroma of orange peel and pine with a hint of caramel malts.

The taste was much like the aroma. Bright citrusy orange and pine with a nice sweet caramel backbone. A light bitterness to the finish.

Medium bodied and clean with a moderate carbonation.

A very nice IPA/IIPA from 2nd Shift. Even with a name like Ratsalad, I'll definitely have again.

The beer pours an orange color with a white head. The aroma is full of pine from the hops, as well as some floral notes and some biscuit malt. The flavor is also very nice. I get a good dose of pineapple and pine, as well as some floral and perfume-like notes. There is also a hint of grass and some biscuit malt. There is a ton of hop flavor but the bitterness is low. Medium mouthfeel and medium carbonation.
