Our dear friend Mr. Baubien was the first person to open a tavern in Chicago, just up the street from us on the banks of the river. He also opened the first Inn so cheers to you sir! A true Chicago pioneer. This traditional Saison is brewed with imported hops, malted barley and authentic yeast from one of Belgium’s oldest farmhouse brewers. (There is a plaque in his honor on Wacker.)

I dont drink many saisons but just short of Ann this is perfection.

I had the pleasure of tasting this and it was mindblowing in its golden hue, minor robey tones, lacing, white cumulus nimbus strata and incredible wafting.

The taste has brett c and so much bubblegum, incredible dryness and complexity folding my palate in on itself like the membranes of a mitochondria, but with more ATP as a result.

I wish they would bottle this and distribute it to California.

On-tap at Haymarket. Served in a 4oz stange glass.

A - Served with a finger of off-white foam that settles to a collar, some spotty lace, and a lightly hazed peach flesh body.

S - Musty, pilsener malt, apple and grape skins, grass and hay, Belgian yeast. Quite convincing for the style, and thankfully not overly sweet.

T - Tastes much like it smells. There's some pleasant stone fruit sweetness at the back of the palate. Finishes with light bitterness.

M - Dry, clean finish, zesty carbonation, medium body.

D - Probably the strongest beer I had out of the six I tried. Solid and authentic take on the style.

A- This beer glows a yellow-orange hazy body with a creamy beige head that sticks to the glass with each sip and last for the full beer. There is a gentle carbonation of tiny bubbles that glide to the surface.

S- This beer has a soft dry yeasty aroma with some green woody hops in the finish. There is a soft cheese rind note that grows as the beer opens up.

T- This beer has the classic saison yeast with some white cheese rind and mellow but dry green spicy hop bite in the finish. There is a soft apricot note that grows a bit as the beer warms and a stone fruit pit quality to it. The green dry hops linger nicely for a moment after each sip.

M- This beer has a light crisp mouthfeel with a soft fizz and no alcohol heat noticed.

D- This is a beautiful saison with nice dry crisp flavor with a great yeast characteristic and some green hops leading the way. The fruity esters are just enough to add some good depth to this beer. This will be even more lovely when the weather is above freezing and will make a good session beer for quafting in the summer.
