White Chocolate, Tahitian Vanilla, and French Black Raspberry Imperial Stout. BoS is a velvety confection of white chocolate dipped dark tart fruit topped with a kiss of amaretto and vanilla aromatics. 13% ABV.
We joined forces with the stout kings at Bottle Logic Brewing to create this massively flavorful adjunct imperial stout. We compared notes on our base stout technique and employed some of their ingredients and methods to create one of the highest gravity beers we’ve ever produced. In finishing the beer, we dosed with some of Bottle Logic’s favorite adjuncts that are new to our brewery.

I have no idea how this 16 oz. can ended up in my fridge, as I am nauseated by most stouts with fruit, but here we are. Pepto Bismol at the ready, here we go.
Dark black. The nose brings sweet malt, chocolate (assumedly white), & light fruit.
Bevy of Swans doesn’t commit the fruit sin I was imagining. The raspberry is light & inoffensive & complemented nicely by the white chocolate. My mom used to make these great white chocolate covered pretzels for Christmas; man. Hefty malts bring more sweetness along with a hard punch of vanilla that runs right along the border of cloying. That leaves me happy to have split this can.
Interesting beer that runs pretty good.

Midnight black body with a finger of light brown foam. The smell is a delight with raspberry coulis, white chocolate, vanilla, amaretto, and a hint of milk chocolate. Taste however needs a barrel because without it the raspberry and to a lesser degree, the vanilla run away with it. Very syrupy sweet with hints of cough syrup flavoring. Feel is viscous, smooth, cool, and sticky, sweetness cloys a bit

Bevy of Swans is a royal stout combining the flavors of white chocolate, vanilla, and black Raspberries. Parish Brewing hooked up with the CA kings at Bottle Logic who helped innovate this great stout. There is a great jam flavor without being too much. Through all the sweetness, the stout somehow remains balanced to create a well crafted experience. A very high quality fruit inspired stout.
