If crafting hazy IPAs were martial arts, our latest collab with @NorthPark represents a twirling 360 drop kick. Presenting: Ghost-Fu! Over the years we’ve become good friends, hanging out at beer fests across the globe, and now we’ve finally teamed up with these IPA legends to brew a rad West Coast DIPA using some of the processes and procedures they do in San Diego! North Park’s Hop-Fu! is their quintessential West Coast IPA that we’ve used as a starting point for Ghost-Fu! Dosed heavily with Simcoe Dynaboost and dry-hopped with Citra, Mosaic, and Amarillo, it packs the familiar juicy punch of Ghost in the Machine but isn’t hazy and drinks smooth for a double IPA. Hii-yah!

West Coast style Double IPA with light citrus and decent piney hop aroma and flavor. Good balance with moderate bitterness. Medium bodied and fairly smooth. I was hoping for more, but it’s still pretty good.

I will try just about any and every iteration of Ghost in the Machine. Some are better than others, and this one isn’t bad. It’s got some west coast ipa vibes to it-copper color, opaque but not too cloudy, a mild dank pine bitterness on the taste that follows a citrusy nose. Crisp, clean, easy sipper with a subtly assertive booziness. Keep the variations coming, Parish. I’m in.

Appearance: A bubble show builds a three finger head atop the fairly clear golden liquid; solid retention and clumps of lacing
Smell: Pine aromatics are defining with subtle undertones of stone fruit and grass
Taste: The rolling surf of the West Coast is apparent from the get go, with piney bitterness dominating from start to finish; the malt adds a hint of stone fruit and there is also a grassy aspect that appears, after the swallow; moderate to high bitterness and a candied orange peel flavors emerges in the aftertaste
Mouthfeel: Medium body with moderate to high carbonation
Overall: A well-crafted West Coaster; nice to get some interesting bitter flavors here
