Draft, Taster Snifter

A – Black, almost plum-like. Off-white foam head with long retention.

S – Light Brett, horse blanket character. Some dark fruit, plums and currants. A touch of whiskey-ish spice.

T – Mostly Brett here, very much horse blanket funk. Not getting much of a sense of lactobacillus. Fruit higher in the mix, plums and dark berries.

M – A bit high on the residual sweetness, but moderate carbonation helps balance along with some spicy notes presumably from the barrel aging.

O – A little lighter than a standard quad on flavor, and lower Brett character providing balance. This is good, but not very bold. Very nice, though.

The 11.5% ABV is completely hidden under the brilliantly balanced sour and touch of toasty malt. The head on the pour was beautiful, but sadly didn't stick around.

the whole idea of a wild quad is awesome, and this is a beer i have always enjoyed. the leopold brothers barrels make it next level, with an intense oak flavor and more time for sourness to develop, this beer is downright acidic! dark brown in color with some red around the edges and a tall and never settling shaving cream thick khaki head of tiny bubbles. it smells like wood and caramel malt, funky too, with some tangy dried fruit notes, oak, and a hint of something sweet, vanilla sugar, molasses, something. the flavor is equally dynamic, but its only moderately belgian. i sort of expected a bigger belgian yeast hit on this, but its not really there, instead the wild yeasts dominate, funky and doughy and livening up the heavy grain base. there is also no booze to this at all, which is shocking for its strength. it also isnt all that thick, some quads can be quite viscous, and while this has a ton of grain at its core, it never really manifests itself as weighty in the traditional sense. as unique and complex as anything else they have done, and the barrel treatment here takes it over the top.
