Vintage spontaneous sour ale aged in oak barrels

Spontaneously fermented in oak barrels, Flor d'Lees derives its name from the microflora that reside in our brewery and the yeasts lees that develops in each barrel. Reminiscent of the great spontaneous Belgian lambic beers historically brewed throughout the Senne Valley, we uphold the time-honored production methods of a traditional malted barley and raw wheat grist, a turbid mash and extended boil with aged hops, overnight cooling of each batch in our custom-built coolship, wort inoculated entirely by the natural wild yeasts and bacteria residing around our coolship and native to our brewery for 100% of the spontaneous fermentation in oak barrels, all prior to the careful selection and blending of one, two, and three year old – or older – barrels, with 100% natural refermentation in the bottle.

Appearance: Pours a hazy golden color with some large bubbles forming from a hard pour; vague spots and dots

Smell: Green apple and oak, with plenty of funk in the aroma

Taste: Tart green apple and lemon flavors forward with the earthy oak tones building; increasingly acetic, after the swallow with the barnyard funk emerging

Mouthfeel: Medium body with no carbonation

Overall: Despite the lack of carbonation, the flavors here have developed nicely

Batch #1, bottles 2014

Clear, straw-yellow brew. Little visible carbonation, and no head.

Lightly tart bouquet, Berliner Weisse-like. Notes of sour apple and cherries play off subtle tones of oak and grass. Delicate.

Flavors are thin and watery. Green apple and raspberries are dried by oak...a touch of lemony zest mid-sip. Quick finish with almost no lingering flavors.

Interesting beer but it just needs more. This is more like a simple table beer than a nuanced wild ale. No reason for its wax tip and years in the cellar.

July 8th, 2015 - This is the penultimate taster here at Crooked Stave and I am still reeling from the quality of everything that's come before it. Like it's cousins, this is a lighter brew, Labrador colored and as impenetrably thick. The nose features cherry and cherry pie, with an apple cider brightness and a lower layer of banana. And the flavor is tart. Acidic up front, it smooths out quickly to reveal banana, orange and mango, and a topic spice. The mango is also more than just mango, with a denser sweeter than the fruit would offer. Impression after polishing off this taster: Crooked Stave consistently kicks butt across the flavor spectrum.
