Sour peach candy scent, reminds me of overripe strawberries somehow. I taste the peaches, but not so much the cream. Sour peach-rings right up front.. A small hit of citrus and malt.. Then the dry oak encases everything. The feel is sorta creamy.. I guess. Everything is working well together here

Lactose is a side ingredient, supporting the peaches. A Good wild, without overpowering the palate. So well made, was worth the try to do something wild.

Pours a light fizzy head with lower retention, fair lacing, clear golden pale color
Nose peaches and funk, fresh juicy peaches, peach juice, with earthy farmhouse/barnyard funk but not too horseblanket like, very creamy too like lactose and yogurt in there, vanilla ice cream
Taste quite tart but not too sour at first anyways, big juicy peaches again, fresh and peach juice, with more souring funk, bacteria acidity as well as some barnyard Brett funk but again not horse blanket funk, general fruity maybe even tropical notes, light base malt character, getting pretty sour on the back end, tart flemmy finish with lingering tartness that makes me want to drink more, although a bit too dry and bready
Mouth is med bod, med to a bit lower foamy carb, bright acidity and a bit flemmy tart finish
Overall very nice beer, lots of great funk, tartness, tons of juicy peach, very enjoyable, as expected from Crooked Stave

Taste: Sour, tart, and sweet, like peach gummy rings, peach, apricot, lemon, with light vanilla notes.
Mouthfeel: Medium bodied, with moderate carbonation.
Overall: Very enjoyable aroma and flavours, with a good balance between sweet and sour.

Pale gold--mostly clear, if only lightly foggy--with a short white head dying to a bubbly uneven ring.
Tart peach meets a sort of soft serve frozen vanilla yogurt. This creamy lactic note then transitions to a slight oak accent in the semi-dry finish where a prick of lemon candy comes up.

Yellow in color with a pronounced haziness. There’s a fingernail of dishwater white around the rim and covering a quarter of the top. The aroma is of peaches and a hint of lactose. I’m tasting peaches and just a hint of lactose. The mouth is moderately carbonated, crisp, and refreshing.

Wow, what a crazy looking label. Not sure why they have the holographic mirror but, as is the case with most Omnipollo labels (I take it they were responsible for the graphic elements), this one was pretty amazing.
As for the beer, it poured a slightly hazy, golden yellow color. An inch-tall, bubbly, bright white head topped the body and slowly dropped to a thick, clingy collar. On the second pour, the liquid became significantly cloudier. Thin streaks of lacing stuck along the glass.
Outstanding aroma. Ripe peach notes came through big time. Really juicy and sweet. Loads of fragrant vanilla as well. Peaches and cream did indeed come to mind. A crisp, wheaty tartness balanced out the adjuncts really nicely. Touch of brininess. Some mustiness was noticeable as well. Fairly straightforward overall but so pleasant and enjoyable.
The peach and vanilla notes were again apparent in the flavor profile but not quite to the degree they were in the nose. Freshly picked peaches perhaps. Pleasantly sweet but also slightly tart. Creamy lactose notes were rather prominent. Wheaty and lemony in the center. Fairly tart and acidic. Some oaky tannins and white wine notes appeared in the finish. Nice sweet-tart melding of peach, vanilla and lemon after the swallow.
Medium-light bodied mouthfeel. The liquid contained a fine, fairly aggressive effervescence that fluffed up nicely on the palate.
I love it when a beer truly lives up to its namesake, and Bianca Peaches & Cream Wild Wild Brett did 100%. The fruit component in many fruited wild ales often seems to ferment out, but it definitely did not in this particular one. Crooked Stave and Omnipollo are very different breweries with vastly different specialties, but each of their hands was well represented in this impressive collaboration.

When my grandmother would make peaches and cream, it turned out nothing like this. Boy did she miss out! Teaming up with Omnipollo brewers, the Crooked Stave artisans bring a special microflora to the table while palisades peaches, lactose and oak give this collaborative Bianca series a unique identity. Great minds are souring alike again!
Light golden, canary in yellow even, and with a pale haze, the delicate looking ale carries a racy froth with creamy structures. As the acidity breaks down the foam, the scent arises with the radiant tang of peaches along with a backdrop of citrus, cider, wine and the light pungency of brisk sea air. Light candy lays upon the tongue with the suggestions of hard taffy, wafer breadiness and smooth vanilla cream maltiness.
As the light sweetness begins to evaporate on the middle palate, the tartness of peaches rumbles onward and links up beautifully with the natural sourness of lime, lemon, white grape, passionfruit, gooseberry, crabapple and kiwi. As a light mustiness builds, a peppery and vinous taste trends strongly wine-like with rustic nuance of weathered balsa and damp burlap.
Bright acidity keeps the session light, sparkling and highly refreshing, but the woven smoothness of milk sugars keep the textures creamy with the soothing nature of vanilla. Light earthiness chases a mild briny finish into an aftertaste of nectarine, chardonnay and sourdough.
