Wet 'N Wilder is the first fresh hop brew made by Payette Brewing and continues to be a highlight beer of the Fall. Fresh hops are only in season for so long so grab a pint of Wet 'N Wilder and Enjoy the fresh-ness of Citrus hops.

Fresh hop beer on tap at Taphouse, Boise, on October 9. Entered in BA database later, from notes. It's a good example of a standard fresh hop ("wet hop"?) beer.

12oz can. Stamp on bottom lip reads '09/26/23', with Citra listed as the hop variety.
Partly cloudy, deep gold colored body. One finger of white head, which retreats to a thin cap and high ring. Leaves behind interrupted rings of lacing.
Aroma is pine resin, with orange and grapefruit.
Taste leads with the pine resin, with other flavors of citrus orange and grapefruit. Moderate bitterness throughout but also some sweetness. Another wave of pine resin in the aftertaste.
Medium mouth feel. Somewhat dry finish. Very good carbonation.
Delivers with the pine, which is everywhere in the taste profile.

i really liked this, better than the sofa king fresh, if indeed that one uses wet hops too, either way i think the hops pop in this one a little bit more. to me it tastes like mosaic, but someone said it was chinook, which to me doesnt seem to make sense, but maybe in a wet hop context they are closer than i have known them to be in other forms. the beer is pretty malty looking, but its all hops in the nose and taste, less of the copper character it looks like it should have, more spicy greenness, drippy weedy dankness, and subtle orange, pineapple, and pine notes, really pretty lovely stuff. bitterness is low, some grain sweetness exists, and overall its really more fresh than anything else, which it should be. cool that they use locally grown hops, and cool that chinook is doing something like this, fruitier than i have known it, and somewhat intense as it warms. really nice beer overall, fresh for sure, some may say its a little malty, and there is a faint hint of red pepper and mango to it, a capsicum thing, but its pleasing with the grains and the oils that linger, and i really dug this. one of the better payette beers i have had recently!

Hazy orange gold with a small bone color head that lasts about five minutes. Very fine bubble dense lace forms as the level drops.
Smell is very green and fresh hop aroma.
The taste is very rich green hop flavor. Plenty of sweetness from the malts.
Mouthfeel is medium with modest carbonation. The finish is very lightly dry and bitter.
Overall a tasty fresh hop APA.

Draft at Payette. Bright Golden pour, mild haze, spotty head. Roma I f pineapple,a little bit citrus, a little bit tropical. Taste is pineapple and some hop resin. Sticky finish.

Crowler from the brewery tonight... Paid $6... Pours mostly clear orange with a long lasting sudsy white head... Very pretty... Nose is bright and green... Reminds me of the way peashoots taste... Herbaceous and a little minty.. The Chinooks get a little catty with warmth.... Good bitterness makes for a proper PNW wet hop beer... Very drinkable and very tasty.
