Displaying complex and layered flavor and aroma, Fir-Bidden Baltic Porter represents our passion for fun and adventure in Idaho's mountains. Pours almost black with ruby hues, its drinks smooth with notes of dark toffee, toasted marshmallow, raisins and cherry. Noble hop varietals and the evergreen (hand picked by Payette cellarmen) with warming alcohol aid in an opulent smooth mouth feel.

Draft at brewery. Dark brown with small tan head. Roasty aroma accented by some piney hops . Taste also features the roast grain bitterness, and the hops accent nicely. Lingering bitterness. Hides the ABV well.

i was so excited about this one, as i am a huge spruce beer enthusiast, and i have a passion for baltic porter, and have even dreamed of a merger of the two before, but this didnt quite come together the way i hoped it would, and now sits as one of the lesser payette beers i have has since my recent move to idaho. its dense looking, close to black, and has a short layer of deep tan head on it, a fine appearance from the tap. the pine in the aroma and in the flavor as well seems covered up a little bit by an exceedingly bitter dark grain profile, which kicks in kind of early and lingers late, way more dominant than it needs to be, and even in a stronger beer with lots of flavor and lots of room for flavor, it seems like more than is necessary. it may be that its not super fresh and the pine element has faded some, but its not as prominent as i want it to be, and it leaves me wanting more. it could also be that the way the pine was added has resulted in some green herbal bitterness, which results in a sort of double jeopardy situation, i dont know. black coffee, light smoke and char, and less of the cold conditioned character than i like in the style. not to say this is a bad beer, its a nice baltic porter, quite robust really, but the piney element that sold it to me wasnt really there to its full potential...
