This style was born from a waste-not, want-not mentality of Trappist monk brewers. after producing an Abbey Ale of strength, the brewers would re-wet the mash and run off a second beer to be consumed by the monks themselves. Our version of this style used similar techniques and is a crushable and refreshing light beer. There are hints of sweet spice and dried citrus rind from the addition of coriander and noble Saaz hops. Hints of tea-biscuit and candied ginger along with chamomile tea bolster the drinkability of this "small beer."
