Pours a completely opaque matte light pink color. Thick pink tinged off-white head collapses slowly but steadily ultimately leaving no residual head.
Aroma has notes of prickly pear, cactus, a touch of pepper, a hint of better and a light minty flavor. The aroma is subtle, but very bright and clean. It does have a subtle paletas like aroma when you take it in. Really unique.
Taste follows the nose with a strong prickly pear flavor up front. Some spicy Belgian-esque yeast notes come through with a slight hint of berry on the back end. There is just nothing on the back end and finish. It kind of pops with flavor up front then just dies out quickly leaving a dry blank finish.
Feel is incredibly light, almost airy. Clean and semi-crisp. Dry finish.
This beer is really unique. Its just its own thing - but one that is really worth trying.

12 oz. clear glass bottle, no bottled on date. Acquired a single of this stuff from the local beer store. My second variety of the Paletas series from 5 Rabbit. "Wheat Beer with Prickly Pear fruit". 3.50% abv.
Poured into appropriate 5 Rabbit Cerveceria Paletas can glass.
A - Pours the same as it looks in the clear glass bottle - a hazy juicy pinkish grapefruit juice looking beverage. Conjures a little bit more than a finger of fizzy bubbly pinkish-reddish-white tinted head that dies out quick. No real lacing. Appears adequately carbonated. Looks nice, unique, very interesting.
S - A very nice dominant juicy fruity prickly pear aroma - mild tartness / sour / funk, earthy, musty, vegetal, with notes of grapefruit, cactus, grass, cucumber, and bit of yeast-derived / bacterial fruitiness reminiscent of of the lactic acidity in sour beers. Smells juicy, vegetal, and cactusy above all. Gose-like in the nose. Very appealing.
T - Taste is the same: slight bacterial / yeasty tart / sour, reminiscent of some gose style beers. Fruity, juicy, & vegetal with notes of grapefruit, cactus, lemongrass, citrus rind, cucumber (Prickly pear), and a bit of herbal spice rack notes on the back-end.
M - Feel is smooth, crisp, clean, juicy, fruity, with a semi-dry bacterial / yeasty finish.
