As far back as the 11th century, Belgian monks brewed beer, their sustenance depending on it. Their rigor and know-how largely contributed to the development of the brewing traditions. It is in their honor that we produce L'Assoife 8, a Belgian dubbel style brown ale brewed with an addition of Candi sugar (cane sugar). It offers malted notes of dried fruits, molasses and roasted hazelnuts ending on a smooth, slightly sweet finish with low bitterness. On the path to Heaven!

Dark brown with a modest head and a cap. Rich nose of malt and dried fruit. Smooth medium malt body with dry Belgian yeast notes. Low carbonation.

Appearance: A deep, nearly opaque brown showing next to no signs of carbonation save for the finger of frothy dead that laced somewhat, but didn't really stick around.
Smell: A rich array of smells as dry yeast offers cherry and berry notes which a strong cocoa and roasted nut smell which the malt provides. Warming does bring it out a bit, but the smell is ample even before it.
Taste: Starts with a nice mild berry and toffee flavour with a walnut hint which then turns into an overly bitter, dry earthy mess akin to spoiled walnuts. It reminds me of the one time my aunt made this yellow walnut cake with bad walnuts. Bitter and dry.
Mouthfeel: That bitterness tries to sitck around but thankfully it is short lived. The beer gets flat really quick. The transistioing of the beer is very rough and the dryness is excessive. I'll give it some points on the fact it's very high alchohol content and manages to diguse it, albiet as a construction worker weilding a bitter jackhammer.
Drinkability: Well I got though it, which is saying something and I'll give it some props for not comming across as classy, but this beer really isn't doing it for me. It's not refreshing, it's not easy to drink and it's medium body is the only thing that saves it here.
Final Thoughts: A disappointment for sure, espcially compared to vastly superior L'assoiffé 12. It is bad to the point where I suspect a bad bottle may be at fault here, but there doesn't seem to be any visual indicators of that. There is not a lot here I can really say, other then unless you want a dry and bitter nut experience, I'd stay away from this one.

Being from Quebec I get to try out some of the beers from this part of the neck of the woods. The province produces some really good beers and while this may not be among the best, it's a good one.
-Dark brown color (almost like a dark maple syrup right out of the sap), okay foam and retention.
-Nutty and fruit (dried type) overtones which become more pronounced with each sip. I detect a hint of molasses in the smell. I believe Belgian Dubbels come with some mild spice flavors but don't look for any here.
-Smooth finish and bitter after taste negligible.

Darker in appearance then I expected. Brown with ruby red highlights clarity is a touch unusual for the style IMO. Two fingers of head. Moderate lacing and retention. Signature belgian yeast profile on the nose. Clove and some slight dark fruit esters. The palate is dominated with bready, slightly toasted flavors. Some yeast comes through here as well but it is more restrained only poking at flavors like plum and maybe a bit of ripe red apple. Highlight is on malt and almost nutty flavors.
Overall a decent beer. A bit lacking in the Belgian department and the yeast profile is a bit to held back for me but it was okay.

Pours an opaque jet black with a huge three fingers of tan head (I had to pour very aggressively) that hangs around really well at an inch before becoming a patchy film-quilt; don’t know if I just never have paid attention to other beers, but I swear the head is sparking. Decent retention; little to no lacing. (3.75)
S:
A sweet saddle. Baking cocoa, cherry cordials, roast nuts, leather. (3.5)
T:
Cherries and chalk. Dark fruits, cocoa, coffee, nuts. (3.25)
M:
Thin and dry. Some carbonation and a slightly prickly mouthfeel with a lingering finish. (3)
O:
Okay dubbel.
I guess what I don’t like about “Belgian styles” is that you can usually tell what country they are NOT from. That said, Quebec makes some solid ones, this one is not bad, but it is definitely pretty weak on the scale of dubbels, bruins, et al.
Pours luxurious-looking with a glittery head and a nice chocolatey nose. I have never really picked cocoa powder out of a beer before, but damned if it doesn’t smell like a bag of cocoa powder. It is pretty thin for me and has a slightly burnt aftertaste. A fairly solid beer, but stick to something Belgian ; )
Won’t have again; would pass up for other options. (3.5)
