Sourness. It's not just Belgium anymore. The control over innocuous fermentae has allowed brewers all over the world to create high quality, characterful, and still rustic sour ale. ...even Canada.
Solera, the time honored and traditional way of storing and serving sour ale gives the Brewrey of du Monde a unique character that starts with a champagne pour of golden elixir with a lively dance of streaming bubbles and a frothy white cap. Apple, grape and a bevy of citrus waft over the senses while the first sip graces the tongue with the light maltiness of honeysuckle, wafer and taffy.
But any reliance on sweetness is short as the ale quickly sheds much of it malt influence and favors the sourness that soon batters the middle palate. Green apple, white grape and the juiciness of yuzu and melon bring out a strong impression of dry French cider and white wine. The earthen spice that follows teases the tastebuds with a woodsiness of weathered oak, leather and hay in nearly cellar-like conditions. A fine and grassy bitterness is shy and lurks behind to balance any attempt of a malty rebuttal.
Medium light on the palate, especially for sour ale, the wild ale carries a musty tone in a retro-olfactory demeanor that's pleasantly of rife and aged cork and a light horsey, gamey level of complexity, trailing into a medium short aftertaste of sourdough and piquant sourness.

Super cloudy. Huge honey, floral, berry, lemon, acidic aroma. Acidic and floral flavour. Clean lemon candy notes. Good stuff. Acidity blended well with the base flavours in the beer.

It's an "Acidulated farmhouse pale ale" which is really intriguing.
Fuzzy straw in color with a nice 1 inch white bubbly head and lots of carbonation with bubbles that stays on the glass before going to the head. A nice funky smell from the yeasts with a nice aroma of green apple and bananas, really a good smell I can't wait to taste it! In the mouth the yeasts "attack" the tongue with a carbonation similar to a soda. It has a nice apple/banana flavour with a funky finish. Not really bitter but definitely acidic. Not bad actually and really interesting.

In the mouth the yeasts "attack" the tongue with a carbonation similar to a soda. It has a nice apple/banana flavour with a funky finish. Not really bitter but definitely acidic. Not bad actually and really interesting.
