insanely cool beer here, easily my favorite from our visit here, a raw ale, meaning it has not been boiled, something i have always liked but rarely see anyone do, a was stoked to see this on the menu here. not boiling it leaves a lot of the natural grain character in tact, the wheat here is more flavorful than it usually is in beer, almost a sliced bread foundation to this. its lightly tart, a clean bacterial pucker to it, and a little smoothness from some oak ageing, not overly mature, but the whole thing remains delicate, which i like a lot. notes of chardonnay, pear, white peach, and lemon here, really pretty brightly fruity, with the oak unifying it all, and the density of the grain quite substantial for how low alcohol this is. i really can appreciate the rawness, and its something i love, makes it rustic and farmy and old worldy even without a particularly interesting yeast complexion. a clever beer overall, very well executed, and different to be sure. i wish more brewers would do this sort of thing. nice execution here!
