We brewed a pale sour, aged it in wine barrels for 7 months, then loaded it up with Citra & Mosaic hops.

wine barrel aged sour beer, nicely dry hopped, way more complex than the we are not animals kettle sour they do, and one of our collective favorite beers in here from our visit. a little less bright in the glass than it could be, but active looking and relatively cleaned up. smells like a whole heap of oak, light vanilla, wine tannins, and earthy density, a cool starting point for this. the sourness is clean enough, makes my mouth water a little bit, but isnt super intense or anything, not sharp or hot at all. the citra and mosaic dry hopping are cool too, they give an otherwise very mature beer a net freshness not often seen in beer like this. there is some light bretty funk to this, not super wild, but more interesting than the other sour we had here. juicy peach and meyer lemon come to mind, white and red wine notes alike, and simple but hearty on the grain side. a well made beer, nice and bubbly too, short of elegant, but drinkable for sure. interesting that some of the most ambitious beers in here were also the most successful, it doesnt usually work that way...
