sometimes the simplest beers can be stupidly complex, and thats what we have here, such a dry, developed and mature brett profile that it almost tastes smoked, bandaid and iodine notes abound, but for those familiar with this particular brett strain, its quite obviously beautiful and amazing. really neat that these guys have been doing more and more of this funky stuff lately, they have all been awesome but this one is next level. it has a true almost campfire smoke to the nose, but its all from the brett. its wheaty, and has a pretty grassy and dried herbal english tasting hop complexion to me, and is somewhat bitter too. i like how dry and fluffy it is, some preserved lemon tang and acid to it, new but also mature, really complex for how basic it sounds on paper. a cloudy on the pour from the tap, almost greyish looking, btu creamy headed and bubbly too. you have to like wild mixed culture beer, but for me, this is really neat, different than what else is out there right now, and another winner from perennial, who can apparently do whatever they want and have it work out brilliantly. this will forever be underappreciated i feel, but i loved it.
